About the wine
50% Xarello and 30% Macabeo sourced from the sub region of Central Penedès, as well as 20% Parellada from the Upper Penedès. Altitude of the vineyards varies by variety: Xarello at 110m, Macabeo further up at 250m and Parellada highest at 315m. A pneumatic press is utilised, and each grape variety is fermented separately at a constant temperature of 16ºC in stainless steel tanks. Second fermentation in bottle at 15-18ºC. Ageing period: more than 24 months. Vintage dated each year. Residual sugar: 6 g/L.
Presents a pale yellow coloured cava with fine and persistent bubbles. Aroma: intense aroma with fruity and floral hints and gentle notes of ageing. Palate: fresh, slightly sweet and very round palate.
