Description
After gentle pressing and clear settling, the musts are vinified in barrels, without new wood, between 16°C and 18°C, then aged on the lees and stirred until the desired smoothness is obtained. We are very vigilant about the risks of oxidation on our sensitive grape varieties in order to best preserve the fruitiness and freshness of this wine.
Tasting note
Golden color with silver highlights, its precise nose is fresh with notes of pears and white flowers. On the palate it is an explosion of fruits and flowers, ending with a saline and energetic finish. Bite of breaded sweetbreads, roasted in butter on a slice of toasted bread with dried fruits. Or roasted apricot, with a lightly sweetened almond cream and a creamy, just-whipped cream.
