Description
100% Gamay sourced from vines located in Vosne-Romanée & Flagey- Echézeaux. Predominantly clay soils. Hand harvested. Natural yeasts. 100% whole bunch. Five days cold maceration, one pigeage per day at start of fermentation, then pump-overs during maceration for gentle extraction. In total 15 days vatting time. Pneumatic pressing. 11 months in used French oak barriques followed by 3 months in vat. One racking only. No fining and no filtration.
