Jean-Philippe Fichet is a self-motivated individual – hard work comes naturally. He is also a perfectionist. He has built up his vineyard holdings over time and he now has a domaine of 7 hectares, mainly of village Meursault, including a number of excellent lieux-dits, among them ‘Meix Sous le Château’. His goal is to express the subtle nuances of each of his plots as genuinely as possible, be it a 1 er cru or ‘village’ wine. The resulting wines are truly exceptional, with many gaining well-deserved accolades.
Jean-Phillippe’s wines are concentrated, yet fresh. In the vineyard, he is an advocate of ploughing to cut off the superficial roots, which can rapidly take up surface water. This encourages the main roots to penetrate deeper into the soil to supply the right quantity of water to the vine throughout the vagaries of the growing season. This also helps to regulate yields, as well as to promote increased acidity in the grapes. In the winery, the key is a long, extended period of élevage – 18 months typically. He favours a combination of 500L and 225L barrels and a relatively small percentage of new oak (20-30%). All these choices help to put the focus clearly on the wine itself and accounts for the striking clarity and depth achieved.
