The grapes are destemmed, put in vats and cooled at 12° for 5-7 days (cold maceration) to extract the primary aromas. Then under the action of yeasts naturally present in the grape (indigenous yeasts), the alcoholic fermentation begins. The maceration lasts between 15-20 days accompanied by rare pigeages (just to break the preferential paths of the grape juice) and several pumping overs per day (depending on the progress of the fermentation). The choice to limit pigeages in favor of pumping over allows us to extract the tannins more gently in order to obtain wines full of delicacy and finesse. Gentle extraction respecting the grape variety, the terroir and the vintage. Duration: 18 months No fining, light filtration just before bottling depending on turbidity. Bottling on a favorable lunar day.

About the producer

Domaine Justin Girardin is very much a family affair, with a winemaking heritage that stretches back to the beginning of the 19th century. Jacques (brother of Vincent) handed over the running of the 17ha family domaine to his son Justin in 2012. Whilst not being officially certified, Justin uses many organic techniques, as he is passionate about producing wines that express their terroir. The results are superbly perfumed, multi-layered wines.
