Description
Sourced from 2.25 hectares of 50-year-old Pinot Noir vines grown within the commune of Santenay. Hand harvested. 5 days pre-fermentation cold maceration. Natural yeasts. Prefer to use rémontage rather than pigeage for a gentler tannin extraction. 12 months maturation, 50% in oak barriques and 50% in cuve. Matured on lees. Light filtration at bottling.
