Description

100% Organic since 2013 (2022 will be the first certified one). Grounds are ploughed under the vine stock. A natural cover planting is hold in every rows. In order to encourage the development of life in our grounds, we only use mineral essences sometimes associated with herbs and plants preparation. Slow pressing. Cold fermentation with only native yeast. The malolactic fermentation is always carried out. Aged in steel tank on fine lees during 18 months; Light filtration just before the bottling.

Tasting note

Our Mâcon-Fuissé Les 2 Bois opens on scents of golden fruit, citrus, peaches and minerality. It’s definitly a crispy and juicy wine, fleshy with a nice density. His tension brings minerality and we love his refreshing and thirst-making finish!

About the producer

Domaine Sébastien Giroux is a relatively new up-and-coming wine producer in the Mâconnais, with 6 hectares of vines in and around Fuissé. The family vineyards have been in the hands of Giroux family for almost three centuries. In 2009, Sebastien succeeded his father with taking over management of the domain. Since then, Sebastien has made a number of changes: The winery now works 100% organically with miniscule amounts of additives used in the wine making process. Harvesting is done by hand, but not everything has been renewed: the oldest source for their Pouilly-Fuissé Vieilles Vignes comes from vines up to 80 years old, vines which have lasted several generations.

Vinification takes place traditionally with as little interference as possible; a natural, long and cool fermentation followed by storage in stainless steel tanks. Sèbastien does not want to exaggerate and cover the wine’s natural flavours unnecessarily, the wines must be elegant and as true to their terroir as possible. Sebastien bottles only when he feels his wines are ready. In the cellar, he likes to take his time with very long maturations, of up to 30 months, which is rare for this region.
