Description

The grape juice is directly selected after picking thanks to a double bottom inside the bins right after picking and directly poured into vats. The juice is poured into the tanks protected with carbonic gas and stabilised at 8 ° during 24 hours to get the pulp precipitated and clarified. Racking. Fermentation with addition of especially selected yeasts for their aromatic qualities, during 40 days, in stainless steel vats, at a low temperature. 3- month long vinification, into closed vats, on fine lees, then racking again, fining and bottling.

Tasting note

A very original rosé wine, with a superb visual as well as tasting elegance : Nice brilliant and lively colour, with strawberry-pink shades. On the nose, pleasant expressive citrus and white peach notes. Refreshing, expressive and dynamic on the palate, with acidulous red fruit notes (cherry, redcurrant, raspberry). A pleasant length, and a fresh finish with a touch of pepper.

About the producer

Located just outside Béziers to the east, on the Route de Bessan, the historically rich Domaine de Bachellery is owned and run by the Julien family, having taken over the property in the 1980s. This excellent site on the ancient Roman road, the Via Domitia, affords a fine view to the south of the Mediterranean. The vineyards are planted on small rolling hills, of some 70m altitude that run parallel to the sea. The soils are a mix of clay-limestone, as well as gravels and large flat, round stones (galets).

Bernard Julien is leading from the front in terms of driving the ambitions and quality of the domaine’s wines. Bernard is one of the most admired vignerons in the region, his vineyards producing an exemplary quality of fruit. The majority of harvesting is carried out at night in order to preserve the freshness and to avoid unwanted oxidation. Temperature control, lees ageing and maturation in tank, as well as oak, all play their part in the fastidious winemaking protocol that Bernard advocates. As the quality continues to be enhanced and refined, the resulting wines offer even greater value, whilst delivering exceptional flavour and texture.
