About the wine
Sourced from a small 0.35 hectares parcel of 50-year-old vines grown on clay/ chalk soil on the very edge of Fuissé towards Pouilly. The heart of the appellation. Precision viticulture with organic treatments only. Manual harvested in small crates. Natural yeast fermentation, maturation on lees in 350L barrels (8% new) for 15 months. Light filtration, bottling by gravity. Only 600 bottles produced.
