Description

Tasting note

The color is orange pink, with salmon-pink reflections.This champagne is true to its nature as a Rosé, with aromas of strawberry, tangerine, kumquat, carnation, cherry, and a few accents of spice (pepper-paprika). The taste is a fresh, plump and crisp Rosé! Raspberry, strawberry and pepper are present alongside orange and kumquat. Its mid-palate is fruity, with a nice chewiness and a long finish. There is a delicate balance between the chalky freshness and the fruitiness, delivering a slightly salty finish with spicy relief.

Food pairing

Pumpkin soup and scallops; Roasted cod fillet with parsnip purée; Filet mignon of veal with a reduced morel sauce; Beef and shiitake cassolette; Brie de Meaux.

About the producer

The history of the Gounel-Lassalle family began at the end of the 19th century in Chigny les Roses, a village in the heart of the mountains of Reims, classified as Premier Cru. Gabriel and Alfred Lassalle bought the first vines to cultivate them. Two generations follow one another. Hélène born Lassalle married Gounel and Pierre Gounel is their grandson. Today Arnaud, a passionate winegrower, in love with his vines and his wines, perpetuates this tradition passed on for 4 generations. A passionate winegrower, Arnaud Gounel transcends his roots with Sophie, his spark. He continues on his path, elaborating his wines with passion in order to one day pass on his terroir and his family know-how to his two sons Leonard and Marius, who will continue to write the history of Champagne Gounel Lassalle. The vineyard, labelled as High Environmental Value (HVE) level 3A, sustainable viticulture in Champagne (VDC) extends over 5 hectares, spread over 29 plots located in the villages of Chigny les roses, Ludes and Rilly la montagne, classified as Premier Cru.
