Description

The harvest usually starts at the end of September. Grapes are selected and handpicked for optimum vinification and evolution: The grapes are destemmed and pressed. Fermentation takes place in stainless steel and lasts about 15/20 days. Temperature is controlled during the whole phase and remains between 20° and 24° C. Once the fermentation is finished, the wine is run off its skins, and goes into stainless steel tanks for a few months remaining on its lees until bottling.

Tasting note

Deep red in colour, with purple hints. On the nose intense notes of sweet cherries and ripe fruit are combined with a touch of bitter almonds. On the palate it is full bodied, quite intense with round tannins and persistent aftertaste.

About the producer

The Monte Zovo range is produced from across 140 hectares of family-owned vineyards to express the principal denominations of the Verona area – Valpolicella, Garda and Lugana – with their origins in the Valpolicella Classico area near Fumane. Diego Cottini is the principal winemaker, backed in Valpolicella by renowned consultant Riccardo Cotarella. They now own 50 hectares on the Tregnano hillside, home to some fine Amarone-producing vineyards (including the prized 12- hectare Zovolo plot) with the best orientation and suitable elevation. Diego is convinced of the importance of altitude for the production of high quality grapes; all the vineyards are between 450 – 600 metres above sea level.
